I don't know, Chris, I don't think pickle jello would be very good! I think they leave it at fruit flavors for a reason. I can't think of a jello flavor I'd like that isn't fruit... I'll keep pondering.
I would vote for beer flavored jello (Guinness of course), Cheese jello (Pepper Jack), and pizza Jello (hawaiian).
